Pepperoni Pizza Puffs adapted from Everyday with Rachel Ray
This is my go to fun family night food and lunch box happiness.
The girls love cold pizza.
- 3/4 cup flour
- 3/4 teaspoon baking powder
- 3/4 tablespoon Italian seasoning
- pinch of salt
- 3/4 cup low fat milk
- 1 egg, lightly beaten
- 1 cup shredded mozzarella cheese
- 1/4 Parmesan cheese
- 1 cup cubed pepperoni
- Preheat the oven 375 degrees. Spray a 24-cup muffin pan with cooking spray. In a large bowl, whisk together the flour, baking powder, Italian seasoning and salt. whisk in the milk and egg. Stir in the mozzarella, Parmesan and pepperoni; let stand 10 minutes.
- Stir the batter and divide among the mini-muffin cups. Bake until puffed and golden, 20 to 25 minutes.
- Serve warm or cold.
We don't always have all the above ingredients so I use what we have.
I've made just cheese pizza puffs and added cheddar cheese.
